Smoothie Challenge!

I started a smoothie recipe challenge over on the facebook page CreativeThreadz-My-creative-life-after-50 . However for those of you not on FB, please feel free to join in and post your recipe below. It doesn’t have to be smoothies. Let’s share and collect as many recipes as we can!

Clean Eating Cranberry Banana Smoothie

  • 8 oz. fresh cranberries
  • 2 small banana
  • 1 cup canned, light coconut milk, no sugar added ~I will change the coconut milk to soy or other milk since I’m allergic to coconut

Place all ingredients in a blender and blend until smooth.  Enjoy!

Chicken And Dumplings

  • 1 Chicken Breast
  • 1/2 Onion
  • 3 Carrots
  • 3 Celery
  • 1 canning jar of chicken stock
  • Parsley, garlic, thyme, salt, pepper
  • Biscuits~ I use Bisquick, add some garlic and cheddar cheese.. OMGosh good.

Heat oven 350.

Chunk the meat and fry with onions. I use cast iron skillet. Add diced carrots, celery, spices and chicken stock. Boil for 15 minutes. In the mean time make biscuits, add to pan and cover for 10 minutes.

Take lid off and put hole skillet in the oven until biscuits are brown.

    Sounds like something i’d like to make, but don’t have a cast iron skillet and don’t plan to buy one…..I guess to make this I’ll have to transfer the meal to a baking pan to finish off this recipe in the over…..will this affect the biscuits from baking properly?….any other ideas????

      Well that’s a great question. I would transfer the chicken mix to the baking dish and then add the biscuits. Bake them, don’t worry about cooking them on the stove. Since this is one of my recipes, my measurements are not great, sorry. Just make sure it’s not to liquid before you pop it in the oven. You want the base to come out like gravy. OH, now I’m hungry.
